Ingredients
- 1 medium carrot (s)
- 1 apple, sweet variety
- 1 banana (s), ripe
- 3 tablespoon, heaped oatmeal, tender
- 2 egg (s)
- 3 tablespoon flour
- 3 tablespoon water or fresh orange juice or milk
- 1 teaspoon baking soda
- 0.5 teaspoon ½ cinnamon
- 0.3 teaspoon ginger powder
- some rapeseed oil or butter for frying

- Finely grate the carrot. Coarsely grate the apple. Peel the banana and mash it finely. Mix the chopped fruits and vegetables in a bowl with the remaining ingredients. Gently heat a pan with the fat (must not be too hot). Portion the dough with a spoon in the pan. Close the pan with a lid and slowly fry the pancakes. As soon as the top is lightly thickened, turn the pancakes and finish baking. I shape 6 pancakes out of the mixture (2 tablespoons of batter per pancake). I serve the pancakes with fresh fruit and / or apple sauce without sugar. For the adults there is sometimes honey and cinnamon over the pancakes.
