Ingredients

  • 1 red pepper (s)
  • 1 onion (s)
  • 400 g tomato (s)
  • 2 tablespoon olive oil, cold-pressed
  • 150 g ham (Serrano) or other raw ham
  • 2 sausages (chorizo), hot or mild depending on your taste
  • 8 egg (s)
  • salt and pepper

Instructions

  1. Dice the peppers, chop the onion, chop the tomatoes.
  2. Heat the oil and steam the onions for approx. 3 minutes, add the tomatoes and cook for 10 minutes.
  3. Dice ham and sausage and fry in a second pan for 3 minutes.
  4. Preheat the oven to 200 degrees.
  5. Divide the tomato mixture into 4 molds. Spread 2 beaten eggs on each. Spread the ham, sausage and paprika on top. Season with salt and pepper.
  6. Bake in the preheated oven for approx. 10 minutes until the egg white has set but the egg yolk is still soft.
