Ingredients

  • 150 grams sugar
  • 2 tablespoon water
  • 1 pinch (s) salt
  • 50 g butter
  • 1 kg apricot (s), pitted and quartered
  • 1 packet vanilla sugar
  • 1 packet puff pastry, from the refrigerated counter, round
  • 50 g almond sticks or flakes
  • Ice cream, (vanilla ice cream) or whipped cream

Instructions

  1. Heat the oven to 180 degrees. Line a tart form with aluminum foil (this is important so that you can turn the tart better at the end). Place the tart tin with the aluminum foil in the oven to warm it up. Stone and quarter the apricots.
  2. Now bring the sugar to the boil with 2 tablespoons of water and a pinch of salt in a pan and caramelize until golden brown over medium heat. Please do not let it get too dark, the caramel will brown in the oven and will otherwise become bitter. When the sugar is golden brown, take the pan off the heat and add the butter and stir with a wooden spoon (do not use plastic, it can melt, the sugar is extremely hot). As soon as the butter has melted, take the tart tin with the aluminum foil out of the oven and spread the caramel-butter mixture thinly on top. Now sprinkle the almond sticks on the caramel. Place the apricot quarters on top of the caramel in a fan shape. Then sprinkle the sachet of vanilla sugar over the apricots.
  3. Now place the puff pastry on the apricots, press the edge a little into the mold (the puff pastry becomes the base afterwards, then you have a small edge and the caramel does not run out after falling). Pierce the puff pastry a few times to allow hot air to escape while baking. Now bake the tart at 180 degrees for about 25 to 30 minutes on the middle rack, until the puff pastry is nice and brown.
  4. When the tart is ready, take it out of the oven and IMMEDIATELY fall onto a plate (you wait too long for it to stick to the bottom!). To do this, place a sufficiently large plate upside down on the tart and then turn the dish with the plate over. Peel off the aluminum foil. Enjoy the still warm tart with whipped cream or vanilla ice cream.

  6. You can also make the tart in a springform pan. Then place a tray underneath when baking, as the springform pan is not 100% airtight and the caramel will otherwise leak (makes a huge mess in the oven).
