Ingredients

  • 1 kg leaf spinach, fresh
  • 4 cup rice (Thai long grain)
  • water
  • 1 piece (s) ginger root
  • 1 bulb garlic
  • 5 chilli pepper (s) (Thai), green or red
  • Soy sauce (Thai)
  • 3 tablespoon oil

Instructions

  1. It is best to prepare the rice in a rice cooker, take about 1 cup of rice and a little more water per person.
  2. Clean and wash the spinach several times, remove the very coarse stalks, the small stalks can be left or cut into 3 cm long pieces. Drain.
  3. Cut a 2-3 cm piece of ginger into fine strips, about the size of a match. I don`t peel the ginger. Add the ginger to the spinach.
  4. Coarsely crush the peeled garlic cloves and the chili peppers together in a large mortar. Be careful, they are very spicy, it is better to take less in the beginning.
  5. Heat 2-3 tablespoons of sunflower oil in a large pan, fry the garlic and chilli peppers briefly for a maximum of 30 seconds, then add the spinach with the ginger, fry for about 2 minutes while turning. When the spinach has collapsed, immediately remove the heat and add the soy sauce. Bring to the boil briefly, mix with the spinach, add a sip of water if necessary, mix.

  7. You can also sauté a red onion cut into wedges with the chilli and garlic. The taste of the onion goes very well with the spinach.
  8. You can also mix soy sauce, oyster sauce and Thai mushroom sauce.
