Instructions

  1. Cut the fennel into small cubes. Chop the fennel greens and set aside. Finely chop the onion. Sweat the fennel and onion cubes in a little oil. Add the curry paste and sweat for approx. 1 min.
  2. Pour in the tomatoes and the water. Let simmer for 15 minutes. Stir in peanut butter, vinegar, sugar and a little salt and simmer for another 5 minutes. Serve sprinkled with fennel greens.
