Tomato Soup with Chickpeas and Meatballs

I suggest preparing the first course with canned chickpeas, meatballs, and vegetables, stewed with tomatoes. It turns out a thick, aromatic, tasty, rich soup.

Ingredients

  • Minced meat – 500 g
  • Canned chickpeas – 200 g
  • Canned tomatoes in their own juice – 300 g
  • Bulgarian pepper (frozen) – 80 g (1 pc.)
  • Onions – 240 g (2 pcs.)
  • Carrots – 190 g (1 pc.)
  • Garlic – 4 cloves
  • Tomato paste – 3 tbsp
  • Eggs – 1 pc.
  • Bread crumbs – 1-2 tbsp
  • Bay leaf – 1 pc.
  • Ground red pepper – 0.5 teaspoon
  • Allspice peas – 3 pcs.
  • Sugar – 0.5 teaspoon
  • Vegetable oil – 3 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Fresh greens (for serving) – to taste

Directions

  1. Peel the smaller onion and cut it into very small cubes.
  2. In a deep bowl, mix the turkey mince, egg, 1 spoonful of bread crumbs. Peel 1 clove of garlic, pass through a press and add to the minced meat. Salt, pepper, and mix thoroughly. If the minced meat turned out to be liquid, add more bread crumbs.
  3. We form small meatballs from the minced meat obtained.
  4. Heat 1 tablespoon in a frying pan. a spoonful of vegetable oil. Fry the meatballs on all sides for 2-3 minutes until golden brown.
  5. Peel the carrots, bell peppers, and the second onion. Rub the carrots on a coarse grater. Cut the onion into half rings, the pepper into cubes.
  6. In a saucepan with a thick bottom, heat 2 tablespoon. tablespoons of vegetable oil and put onions, carrots, and peppers. Fry vegetables, stirring occasionally, for 5 minutes over medium heat.
  7. Add tomato paste to the fried vegetables and add sugar. Stir and simmer for a couple of minutes over low heat.
  8. Cut the peeled tomatoes into 4 pieces.
  9. Add meatballs, chickpeas, tomatoes to the stewed vegetables in the pan. Pour in red ground pepper, allspice peas, and salt. Pour the contents of 1 liter of hot water and bring to a boil. Reduce heat, cover, and cook for 10-15 minutes.
  10. We clean the remaining cloves of garlic and pass them through a press. After 10-15 minutes add bay leaves and chopped garlic. Bring to a boil. Turn off the heat and let it brew for 15 minutes.
  11. Before serving, sprinkle the soup with finely chopped herbs and invite your family to have a delicious lunch.
