Tortillas with Salami and Cheese

Recipe for making Spanish tortillas with salami, potatoes, onions, parsley and cheddar cheese.

Serving: 4

Ingredients

  • Salami – 180 Grams
  • Potatoes – 670 Grams
  • Onions – 1 Piece
  • Eggs – 6 Pieces
  • Parsley – 2 tbsp
  • Salt and ground pepper – – To taste

Directions

  1. Thinly slice the salami. Heat 1 tablespoon olive oil in a skillet, fry the salami until crisp. Place the salami on paper towels and drain off the fat.
  2. Cut the potatoes into slices. Chop the onion thinly. In the same skillet, fry the potatoes and onions for 2-3 minutes, stirring frequently. Then cover and fry over medium heat for about 30 minutes, stirring occasionally, until the potatoes are soft and slightly golden brown.
  3. In a large bowl, combine eggs, finely chopped parsley, grated cheese and salami, and season with salt and pepper. Stir everything together.
  4. When the potatoes are ready, add them to the egg mixture and stir everything together.
  5. Add 1 tablespoon of olive oil to the same skillet. Lay out the potato mixture. Cook the tortillas over very low heat until the egg thickens. When working with a spatula, make sure that the mass does not stick to the pan.
  6. After the egg has thickened (this takes about 5 minutes), place the pan in the oven and bake until golden brown
  7. Using a putty knife, place the tortillas on a plate. Cut into slices and garnish with finely chopped parsley
