Triple Sandwiches with Tuna, Green Beans, Tomatoes, Onions and Eggs

The portioned sandwiches with tuna, beans, tomatoes, onions and eggs are perfect as a snack or a snack for a feast.

Ingredients

  • Rye bread (thinly sliced) (fried) – 12 slices
  • Green beans, thin (chopped) – 1/2 cup
  • Lettuce leaves – 4 pcs.
  • Tuna, canned in pieces – 250 g
  • Fleshy tomato (cut into thin slices) – 1 pc.
  • Red onion (cut into rings) – 1/2 pc.
  • Pitted olives – 8 pcs.
  • Large eggs (boiled and cut in circles) – 2 pcs.

For refueling:

  • White wine vinegar – 1/4 cup
  • Olive oil – 1/4 cup
  • Fresh parsley (chopped) – 2 tbsp
  • Garlic (chopped) – 2 cloves
  • Small lemon zest – 1/2 teaspoon.
  • Salt – 1/4 teaspoon.
  • Crushed black pepper – 1/4 teaspoon.

Directions

  1.  Prepare the dressing. In a small bowl, combine all the dressing ingredients and beat lightly with a whisk or fork. Set aside.
  2. On 4 slices of fried bread, put one leaf of lettuce, green beans on top, and tuna on top. Place tomato slices, red onion, olives, and eggs on 4 more fried slices. Brush the remaining 4 slices of bread with the dressing.
  3.  Place the tomato slices on top of the tuna slices and cover the tuna sandwiches with the slices greased with dressing. Cut each sandwich in half and fasten the tuna sandwiches with long skewers.
