Carefully pound the turkey schnitzel and season with salt and pepper on both sides.
Place 2 slices of ham, a few carrot sticks and 2 wild garlic leaves on each schnitzel. Roll up tightly and possibly pin in place.
Heat oil in a pan and sear the turkey rolls. After about 7 minutes, add a few tablespoons of water, put the lid on and let simmer for about 10 minutes (duration depends on the thickness of the rolls).
