Vegetable Stew with Potatoes and Eggplant

Who was once a student will understand me! The day before the scholarship, the refrigerator is empty, and only 50 rubles are left in my pocket. And what to do? Starving to death? Of course not! You can make an incredibly delicious vegetable stew. 🙂 And most importantly, you don’t need to use meat, it’s useless here. The stew with potatoes and eggplants turned out to be incredibly satisfying and insanely tasty even without meat. Can be eaten with a plate!
Cook: 50 mins
Servings: 4
Ingredients
- Potatoes – 800 g
- Eggplant – 300 g
- Carrots – 2 pcs.
- Bulb onions – 1 pc.
- Vegetable oil – 1-2 tbsp
- Ground black pepper – to taste
- Salt to taste
Directions
- Cut the eggplants, salt, leave for 10 minutes. Then fry the eggplants in a preheated pan with oil and remove from the pan.
- Cut the carrots into slices, the onions into quarters. Fry onions and carrots.
- Cut the potatoes into cubes and send them to the pan.
- Add eggplants, onions, and carrots to the potatoes. Salt, pepper and pour in hot water. Cooking vegetable stew with potatoes and eggplants over low heat until the potatoes are soft.
The vegetable stew is ready!
