Ingredients
- 500 g penne
- 1 medium onion (s)
- Fat, for frying
- 250 g mushrooms
- 1 clove garlic
- salt
- thyme
- a little cayenne pepper
- 0.5 ½ cup heavy cream, or soy cream
- 1 teaspoon honey
- 150 g oat cheese, e.. Gouda or similar
- 200 g rocket
- 1 handful walnuts, roughly chopped

- Cook, drain and drain the pasta according to the instructions on the packet.
- Clean and quarter the mushrooms. Peel and chop the onions, peel and press the garlic.
- Fry the onions until they are golden brown and almost crispy.
- Sear the mushrooms in another pan, add the pasta and brown. Add the garlic over medium heat, fry briefly and then season. Quickly add the cream and stir in the honey.
- Coarsely chop the goat cheese and mix with the rocket and fried onions. Season everything to taste, add salt if necessary and finally sprinkle the walnuts on top and serve.
- This goes well with lamb`s lettuce with balsamic vinaigrette.
- Tip:
- The mushrooms can be replaced with zucchini or oyster mushrooms.
