  • 400 g flour, wheat flour 1050
  • 400 g flour, whole wheat flour
  • 550 g wheat sourdouh
  • 400 ml water, warm, approx.
  • 1 tablespoon spice mixture for bread or caraway seeds (a matter taste)
  • 16 g salt

Instructions

  1. Knead the types of flour, sourdough and water in the food processor for about 5-8 minutes (can of course also be done by hand). Cover and let rest for 30 minutes.
  2. Now knead in the salt and spices thoroughly. The dough is a little soft.
  3. Put in a well-floured cooking basket, possibly sprinkle spices on the bottom of the cooking basket beforehand. Cover and let rest for about 2 hours.
  4. Preheat the oven to 240 ° for 30 minutes.
  5. Tip the bread dough onto the baking sheet lined with baking foil and spray with water.
  6. Immediately put it in the oven and spray several times in the first 10 minutes.
  7. Switch back to 200 ° after 10 minutes and bake for another 50 minutes.
  8. After about 5-8 minutes of baking time (in no case later) cut the top 1 cm deep crosswise. As a result, the bread still rises and does not tear on the sides.
