Whipped Semolina Porridge with Cranberries and Strawberries

Incredibly tender soufflé, marshmallow – I don’t know what to call this deliciousness. The Finnish recipe for whipped semolina porridge (Fin. Vispipuuro) was slightly altered for yourself – it turned out great! Be sure to have time to cook while there is a lot of fresh, ripe strawberries! No one will guess that this dessert contains semolina! You can even argue!

Ingredients

  • Cranberries (frozen) – 200 g
  • Sugar – 200 g
  • Strawberry – 150 g
  • Semolina – 60 g
  • Water – 350 ml
  • Fresh mint – for decoration

Directions

  1. We send the frozen berries to a saucepan (ladle), fill with water, and cook for 10 minutes.
  2. Filter the juice through a sieve and grind the berries.
  3. We no longer need cake. We return the juice to the stove. Add sugar to the saucepan, let the mixture boil, and the sugar dissolve.
  4. Introduce semolina in a thin stream, stirring constantly. Cook the base – fruit porridge – for 5-7 minutes over low heat, stirring constantly.
  5. After which we cool the mass well. I put the saucepan in cold water and, as it cools a little, put it in the refrigerator.
  6. Beat the cooled mass well with a mixer. (At each stage, this dish can already be eaten.)
  7. Add diced strawberries to the fruit semolina, mix gently – and the dessert is ready! (Save a few strawberries for serving.)
  8. It turns out a very delicate, airy dessert! We put it in bowls and decorate with the remaining strawberries and mint. And while the strawberry is singing in the garden, we try to repeat this magic more often! And if you freeze the dessert, you get popsicles!
