Ingredients

  • 50 g butter
  • 100 g chocolate, white, in pieces
  • 1 egg white
  • a bit salt
  • 1 tablespoon vanilla sugar
  • 1 egg yolk
  • 1 ½ dl cream
  • 200 g applesauce, fresh or canned
  • 1 tablespoon lemon juice
  • 4 tablespoon crème de cassis

Instructions

  1. Melt the butter in a pan over low heat, add the chocolate pieces and let them melt too.
  2. Beat the egg whites with the salt until stiff, stir in the vanilla sugar and keep beating until it becomes shiny. Stir in the egg yolks, the butter and chocolate mixture and mix. Whip the cream until stiff and fold in carefully. Divide the mousse between 4 glasses and chill in the refrigerator for at least 3 hours.
  3. Mix the applesauce with the lemon juice and the cassis liqueur well, cool for 3 hours, add to the mousse and serve immediately.
  4. Garnish with apple slices if you like.

  6. Grenadine syrup, for example, can also be used as an alcohol-free variant.
