Ingredients
For the dough:
- 25 g yeast, fresh
- 0.5 teaspoon ½ sugar
- 250 ml water, lukewarm
- 500 g wholemeal spelled flour
- 2 teaspoons sea salt
- 6 tablespoon olive oil
- Flour for the work surface
For covering:
- 1 onion (s), red
- 500 g cheese (oat cheese), crumbled
- 2 teaspoons sea salt, coarse
- 4 tablespoon olive oil

- Crumble the yeast and mix with sugar and water. Mix the flour and salt in a bowl. Stir in the yeast mixture and 6 tablespoons of olive oil. Knead well and make a smooth yeast dough. Cover with a damp cloth and let rise in a warm place for about 45 minutes.
- Knead the dough briefly again. Dust the work surface with flour and then roll out the dough into an oval shape about 1 cm thick. Use a sharp knife to cut approx. 5 cm long diagonal cross strips into the focaccia. Cover with the cloth and let rise for another 30 minutes. Preheat the oven to 220 ° C.
- Cut the onion into fine rings. Top the focaccia with the onion rings and the crumbled goat cheese. Sprinkle with salt and drizzle 4 tablespoons of olive oil on top. Bake on the middle rack for about 20 minutes until golden brown.
