Ingredients
- 225 g butter, cold
- 300 grams flour
- 1 teaspoon salt
- 150 g suar, brown
- 2 egg yolks
- 1 kg apples, e.g. Elstar
- 1 tablespoon lemon juice
- 4 tablespoon raisins, possibly
- 2 tablespoon sugar
- 40 g almond (s), sliced
- 1 tablespoon milk
- 2 teaspoons cinnamon
- Butter for the mold

- Cut the butter into small pieces. Knead together with the flour, brown sugar, salt, 1 egg yolk and 1 tablespoon water to form a dough. Wrap the dough in cling film and let it rest in the refrigerator.
- In the meantime, grease the springform pan with butter. Peel and core the apples and cut into thin slices. In a large bowl, mix the apple slices with the lemon juice, 2 tablespoons of sugar, cinnamon and raisins.
- Preheat the oven to 175 degrees (convection 160 degrees). Roll out 2/3 of the dough on a work surface so that the bottom and edge of the springform pan are covered (the edge may be approx. 4 cm high). Pour in the apple mixture and smooth it out.
- Shape the rest of the dough into 10 long rolls (approx. 2 - 3 cm thick) and use the strips of dough to make a braid on the cake. Beat the second egg yolk with 1 tablespoon of milk with a fork and use it to spread the dough. Scatter the sliced almonds on top.
- Bake the cake in the center of the oven for 1 hour 15 minutes until golden brown. Warm from the oven and with whipped cream an absolute holiday cake!
