Ingredients

  • 1 kg potato (s), new ones as small as possible
  • a lot sea salt
  • 1 bulb garlic
  • salt and pepper
  • 200 ml oil
  • 40 ml white wine vinegar
  • 1 bunch parsley
  • 0.5 teaspoon ½ cumin

Instructions

  1. Wash the potatoes and cook them in a saucepan with water heavily salted with sea salt.
  2. The potatoes must be covered. To determine the correct salt content of the water, dissolve enough sea salt until a potato that has been added does not sink to the bottom.
  3. When the potatoes are cooked, drain them and put the pot back on the stove. Over a low heat, the potatoes are steamed while gently shaking until the remaining salt crystallizes on the skins and these are slightly wrinkled.
  4. For the garlic sauce, roughly chop the garlic, add salt, cumin and white wine vinegar to a blender and puree. Roughly pluck the parsley and put in the blender. Now slowly pour in the oil while constantly mixing. Season to taste with salt and pepper.
