  • 4 zucchini
  • wheat flour
  • olive oil
  • salt and pepper
  • 800 g tomato (s), ripe
  • 200 g mozzarella, thinly sliced

Instructions

  1. Wash the zucchini, cut off the ends, cut lengthways into thin slices. Place on a plate, sprinkle with salt and pepper and let rest for about 1/2 hour. Then turn in flour and fry in olive oil in portions. Layer the fried zucchini in a baking dish.
  2. In the meantime, scald the tomatoes, peel them, core them, chop them and sauté them in the hot oil. Salt to make juice. As soon as the tomato pieces become soft, puree. Season to taste with basil, thyme, oregano, depending on your taste. Reduce the sauce a little.
  3. Pour tomato sauce over the zucchini. Cover with mozzarella slices, bake in the oven for approx. 20 - 30 minutes at 180 ° C. Serve with ciabatta and a green salad.
