Zucchini Baked with Cheese

This is one of my favorite zucchini dishes, as it is easier to cook than steamed turnips, and there is a minimum of food. Zucchini with spices and butter is baked in the oven and then flavored with cheese. Greens perfectly complement this snack.

Ingredients

  • Zucchini – 1 kg (about 3 medium-sized)
  • Hard cheese (I have mozzarella for pizza) – 200 g
  • Salt – 1 teaspoon without top
  • Ground dried garlic – 1 teaspoon
  • Dried Italian herbs – 1 teaspoon
  • Olive oil (or other vegetables) – 40 g
  • Fresh dill – 20 g
  • Fresh parsley – 20 g

Directions

  1. Wash the zucchini, dry and cut into slices about 0.7 cm thick.
  2. Place the zucchini in a large bowl, sprinkle with salt, dried garlic and herbs, add oil and stir well. Leave the zucchini to marinate a little for 10-15 minutes, and in the meantime, turn on the oven to heat up to 190 degrees.
  3. Grease a baking sheet with vegetable oil and lay out the zucchini. Pour the marinade that remained after the zucchini on top. I covered a baking sheet with foil and then greased it with oil. I didn’t fit all the zucchini on one baking sheet, but that didn’t stop me, I made a second portion next. 🙂
    Send the baking sheet with the zucchini to the preheated oven for 25-30 minutes.
  4. Meanwhile, grate the cheese on a fine grater. (I used mozzarella for pizza, but any hard or semi-hard cheese will do.)
  5. Remove the courgettes from the oven.
  6. Sprinkle with grated cheese and place in the oven for another 5 minutes, until the cheese melts.
  7. Let the cooked zucchini cool slightly. Finely chop the greens and sprinkle with cooled zucchini.
  8. I sprinkled the second portion of zucchini with greens when they were completely cooled, so the greens did not wilt.
