  • 100 g parmesan, rated
  • 2 zucchini
  • 2 spring onion (s)
  • 250 g feta cheese
  • olive oil
  • salt and pepper
  • 5 g herbs, Italian, frozen
  • 40 g olives, black and reen, pitted

Instructions

  1. Whisk the 6 eggs with the parmesan well. Quarter the courgette lengthways and then cut across into slices. Cut the spring onions into slices. Cut the feta cheese into large cubes.
  2. Fry the zucchini and spring onions briefly in olive oil in an ovenproof pan (30 cm in diameter). Season with salt and pepper (not too much salt, as the feta is salted). Add the egg-parmesan mixture and let it bake slightly for about 2 minutes. Scatter the herbs, olives and diced feta over the top and bake everything in the preheated oven at 160 ° for 5 to 8 minutes.
  3. If you don`t want it vegetarian, you can also add ham or fried meat to the zucchini.
  4. Fresh black bread with butter goes very well as a side dish.
