Zucchini Roll with Mushrooms and Cheese

An incredibly simple and delicious snack made from zucchini, mushrooms and cheese! This zucchini roll is perfect as an appetizer on any table, and you can also take a zucchini roll with mushrooms and cheese with you to a picnic as a snack.

Ingredients

  • Zucchini – 2 pcs.
  • Mushrooms – 400 g
  • Hard cheese – 150 g
  • Eggs – 2 pcs.
  • Flour – 250 g
  • Sour cream – 200 g
  • Bulb onions – 1 pc.
  • Garlic – 2-3 cloves
  • Baking powder – 10 g
  • Salt to taste
  • Allspice – to taste
  • Vegetable oil – 2-3 tbsp

Directions

  1. Grate the squash and onion on a medium grater, chop the garlic.
  2. Separate the egg whites from the yolks and add the last to the grated zucchini, send the onion and garlic there. Season with salt and pepper to taste.
  3. Next, sift the flour with baking powder and knead the courgette dough. Whisk the whites well and add them to the dough.
  4. Line a baking sheet with parchment paper, line the squash dough and spread it well over the baking sheet. Place the baking sheet with the dough in the oven, well preheated to 180 degrees, for 30-40 minutes
  5. Fry mushrooms or sauté in a pan. Add sour cream at the end. Grate the cheese on a fine grater.
  6. When the zucchini crust is baked, remove from the oven and cool slightly. Spread the filling of mushrooms and grated cheese stewed in sour cream evenly on it. Gently roll the mushroom and cheese zucchini roll
  7. Cool the finished zucchini roll with mushrooms and cheese and serve, cutting it into pieces.
