Ingredients

  • 2 small zucchini
  • 0.5 ½ lemon (n)
  • 100 g crab meat, in brine
  • 100 ml cream
  • 2 tablespoon olive oil
  • 1 bunch chives
  • salt and pepper
  • Paprika powder

Instructions

  1. Boil water in a saucepan.
  2. It is best to cut the zucchini lengthways into 8-10 slices on the food processor. Do not take the outermost slices. Blanch the individual zucchini slices in water for 1 minute. Then let it dry on paper towels.
  3. Drain the crab meat well. Squeeze the lemons. Wash the chives and finely chop half. Mix everything and season with salt, pepper and paprika powder.
  4. Whip the cream until stiff and mix with the seasoned crab meat. Then distribute the crab filling on the zucchini strips and roll up. Tie together with a stalk of chives.
  5. Place the zucchini rolls on an amuse gueule spoon.
