- 10 cup zucchini, grated
- 4 cup (s) onion (s), grated
- 3 bell peppers, grated, red or mixed
- 5 teaspoons salt
- 2 cup / s sugar
- 0.5 teaspoon ½ pepper
- 2 ½ cup vinegar
- 2 teaspoons celery salt

- Mix all ingredients in a bowl and let steep overnight. The next day, bring everything to the boil for 3 - 5 minutes - depending on the desired firmness - fill the jars (keep jars and lids sterilized ready) and close immediately with screw lids.
