Zucchini Salad with Tomato

Ingredients

1 thick zucchini or 2 thin ones, cut into fine strips or coarsely grated
1 onion (s), finely diced
some olive oil
salt and pepper
3 tomato (s), sliced
125 g mozzarella, drained, cut into slices

For the marinade:

Instructions

Heat 1 tablespoon olive oil in a pan (if possible with a coated layer) and sauté the zucchini and onion over low heat. Season to taste with salt and pepper, then remove from heat and let cool down.
Make a marinade from 1 tablespoon olive oil, lemon juice, salt, pepper, garlic and parsley.
Arrange the salad on a large plate as follows (a large plate or casserole dish also works): First, spread the zucchini and onion mixture and then the tomato slices. Cover everything with the mozzarella slices. Place in a cool place and drizzle with the marinade just before serving.
