Zucchini Salad with Tomatoes

Fried zucchini, collected in a salad along with tomatoes and carrots, is a simple and familiar dish. Once again, you will see that delicious dishes do not have to be complicated.

Ingredients
- Zucchini – 1 pc. (about 330 g)
- Tomatoes – 3 pcs.
- Sunflower oil – 120 ml
- Wheat flour – 2 tbsp
- Garlic – 2 cloves
- Carrots – 1 pc. (about 70 g)
- Lettuce leaves – 2-3 pcs.
- Mayonnaise – 3 tbsp
- Salt to taste
- Parsley – for decoration
Directions
- The next step is slicing the courgettes. Here, too, we act at will: someone loves thick zucchini rings, and someone, on the contrary, is thin.
- Salt the zucchini circles and roll them in flour on both sides. If the rings of the zucchini are large (in ripe fruits), then they can be cut into semicircles.
- Fry in sunflower oil.
- The degree of roasting is also adjustable to your taste.
- We put the fried zucchini on a plate so that the glass is oil.
- In the meantime, let’s prepare the tomatoes – cut them into slices.
- Grate the carrots on a coarse grater.
- Let’s prepare a dressing of mayonnaise and garlic.
(The vegetables in the salad are juicy, so you can do without dressing.) - Rinse lettuce leaves thoroughly (dirt and sand can collect in them). Put it on a plate.
- Put the zucchini on the salad.
- Cover the zucchini with a layer of carrots.
- Lubricate a layer of carrots with prepared mayonnaise with garlic.
- And put the tomatoes on top, which can be slightly salted. Decorate with parsley. Zucchini, tomato and carrot salad is ready.
- In portions, zucchini, carrots and tomatoes can be stacked on top of each other. We determine the height of the “tower” ourselves.
