Grind the oatmeal into flour. Beat one egg white until stiff. Mix all ingredients, except for the egg whites, into a dough, adding the almond milk while stirring until the desired consistency is achieved. Then carefully fold in the egg whites. Bake the dough in a pan.
Tip: The pancakes taste particularly delicious with quark and forest fruits. I mixed the quark with some almond milk and the juice of frozen berries and served the berries on the pancakes.
