Bring the washed and cleaned berries, lemon balm and vanilla stick to the boil with a little water, boil vigorously for about 5 - 7 minutes.
Then remove the vanilla stick and lemon balm and brush everything vigorously through a sieve with a spoon. Finally, wipe off the pulp that is hanging on the outside of the sieve with a spoon and stir everything together with the currant juice. Add the preserving sugar, mix well and let stand for half an hour.
Stir everything again, then bring to the boil and simmer for about 5 minutes. Pour hot into the prepared jars and close immediately.
