Instructions
- Wash and peel the kidneys, cut into strips, wash again, then soak in milk for 20-30 minutes.
- Chop the onion.
- Heat the fat in a large pot over medium heat.
- Add the chopped onion and cook, stirring occasionally, until translucent, about 5 minutes.
- Add the kidney strips and stew over medium heat, stirring occasionally, until they are no longer red, about 10 minutes.
- Sprinkle the flour over the kidneys and stir continuously for about 2 minutes until lightly browned.
- Slowly pour in the water while stirring constantly to prevent lumps from forming.
- Cover and simmer over low heat for 5 minutes.
- Stir in the sour cream, wine vinegar, pinch of sugar, salt, and pepper. Taste and adjust seasonings as needed.
- Keep the heat on low and do not allow to boil, as this will make the kidneys tough.
- Serve with bread dumplings as a side dish.
- Optional: add a pinch of sugar to individual servings for a sweet-and-sour flavor.
