Instructions

  1. Wash the kidneys, peel them, cut into strips, wash again and soak in milk. Steam the chopped onion in fat until translucent, add the kidneys and stew until they are no longer red. Dust the flour over it, brown it slightly and pour the liquid on top (but stir slowly with a little liquid, otherwise it will clump too quickly). Cover and let simmer for 5 minutes. Add the cream, vinegar and spices, season to taste and then season with salt. Do not let it boil anymore, otherwise the kidneys will become too hard.
  2. Bread dumplings are perfect as a side dish.
  3. (I add a little sugar to the kidneys on the plate, it gives a sweet and sour taste. But everyone can decide for themselves.)
