Instructions

  1. Brush the mushrooms only under water and just cut off the stems at the bottom. Leave the small ones whole, cut the big ones in half or quarter.
  2. Caramelize the mushrooms in a pan with olive oil and sugar until they are a nice dark brown color. Finally add the garlic and roast. Then deglaze with balsamic vinegar and red wine and let it reduce.
  3. Season the mushrooms with salt and pepper and pour the sauce into a sealable container. Let it go through for 1 day. Serve sprinkled with the chopped parsley.
