Remove the pulp from the skin, place it on the scales and let it steep in a bowl with the same amount of water for 10 minutes. Pass through a sieve and sweeten with honey or sugar as desired. Serve well chilled with ice cubes.
Tip: The melon water can also be enjoyed as a cold soup. Just add a little less water to the pulp to make it more viscous. Served in the melon bowl, the soup looks particularly appetizing.
