Instructions

  1. Preheat the oven to 180 degrees. Sift the flour into a bowl and mix carefully with the baking powder, baking soda, salt, cinnamon and vanilla sugar. In a second bowl, beat the eggs with sugar and oil.
  2. Peel and core the apples and cut into small pieces. To prevent them from turning brown, drizzle some lemon juice on them if necessary. Add sugar and cinnamon to taste. Mix the apple pieces with applesauce and add to the egg mixture. Stir in briefly. Finally add the flour mixture and carefully stir in.
  3. Fill the dough up to 2/3 height in muffin or paper cases and bake in the oven on the middle rack for 20-25 minutes. Take the muffins out of the oven and let them rest for another 5 minutes. Remove from the tin and leave to cool on a wire rack.
