Instructions

  1. Let the water, vinegar, sugar and salt simmer for about 2 minutes. Cool down and season to taste. The sauce should taste sweet and sour.
  2. The cucumber, peeled only a few strips (because of the color, leave some of the skin standing), quarter lengthways, core and thinly slice the peeled shallots. Cut the chillies into thin rings.
  3. If you like, you can now add some chopped coriander green.
  4. The ingredients for the relish are only mixed together shortly before serving. The cucumber and shallot slices should just be covered by the dressing.
  5. Traditionally, this relish is served with dishes that lack the sour component such as Gaeng Gari (yellow curry), fish or shrimp cookies, satee, Kanom Pang (toast, fried in the pan and filled with shrimp or pork, for example), and it can also be served with massaman curry.
  6. You can also make such a relish from carrots.
