Roughly dice the onions and slice the garlic. Wash the zucchini and cut the ends, cut the zucchini into slices.
Heat oil in a pot. Sweat the onions and leek in it. Add the zucchini slices and sauté. Season with salt and pepper. Stir in the ajvar and add the vegetable stock. Bring the stew to a boil and cook for about 20 minutes over low heat.
Season the stew to taste again and season again if necessary. If you like, you can sprinkle with chopped parsley. Toasted flatbread tastes good with it.
