Instructions

  1. Knead the flour, water, egg, and oil together for about 2 minutes until well combined. Transfer to a covered bowl and let rest for at least 30 minutes.
  2. While the dough rests, peel and pit the apples, slice them roughly 3 mm thick, and mix with lemon juice.
  3. Roll out the rested dough into a rectangle approximately 30 x 50 cm. Spread the apple slices evenly over the dough, sprinkle with sugar and cinnamon, then roll up tightly.
  4. Cut the rolled dough into pieces about 5-6 cm long (you will get about 9-10 pieces).
  5. Heat water and half of the clarified butter in a large pan over medium-high heat until the water comes to a boil.
  6. Place the fritter pieces in the boiling water, cover with a lid, and simmer for about 10 minutes.
  7. Remove the lid and let the water evaporate for 3-5 minutes over medium-high heat; you will hear active sizzling as the bottom of the fritters browns.
  8. Once the bottom sides are golden brown, add the remaining clarified butter and carefully flip the fritters.
  9. Cook the other side uncovered over medium heat for 4-5 minutes until golden brown and crispy.
