Instructions

  1. Heat milk. Whisk eggs, sugar and salt in a bowl and stir in the flour. Carefully stir the milk into the egg mixture. The egg shouldn`t falter. Heat carefully while stirring (do not boil!) Until the mass becomes thick. Allow to cool slightly.
  2. Heat 60 g sugar and almonds in a pan until the sugar caramelizes slightly, add the apple pieces and sauté. Remove about a quarter of the mixture and allow to cool on baking paper, cut the almonds in half.
  3. Deglaze with cream (hold the pan at an angle, run the cream over the hot base), season with cinnamon and vanilla sugar, puree very finely with the mixer and stir into the base mixture.
  4. Let cool and fill in the ice cream maker. When the ice cream is almost ready, add the almond and apple pieces.
