Instructions

  1. Mix together the flour, almonds and salt. Mix the sugar and butter together in a mixing bowl. Then add the milk and eggs, mix everything well. Now add the flour mixture spoon by spoon until a thick dough is formed. The dough is now allowed to rest for 10 minutes.
  2. As long as the dough rests, the apples are pitted, peeled and cut into thin slices.
  3. Heat a pan, melt 1 tablespoon of butter with 3 tablespoons of sugar in it. Steam the apple slices in it for 5 minutes.
  4. Place a coated pan with a little oil on the stove and fry the crepes in it. I put the finished crepes in the 50 ° C oven until they are all baked and the vanilla sauce is done, so they stay nice and warm.
  5. For the vanilla sauce, put the milk and sugar in a saucepan. Mix 3 tablespoons of milk with the starch and set aside. Then cut the vanilla pod lengthways and scrape out the pulp and add to the milk, also add the vanilla pod. Boil everything up.
  6. Separate 2 eggs, mix the yolks with the whole egg. When the milk boils, take the saucepan off the stove, take out the vanilla pod, stir the starch into the milk, put it back on the stove. Then the egg mixture is added. Don`t stop stirring. Keep stirring until the vanilla sauce thickens.
  7. Then it can be served.
  8. Fill a crepe with the apple slices, fold together and arrange on a plate. Add a little vanilla sauce and enjoy.
  9. Tip: I heat the apple slices again and add some cinnamon.
