Stir the butter until creamy, add sugar and vanilla and mix in. Mix in the egg with the yolk. Mix the flour with the cornstarch and almonds then stir in a spoonful. Pour the dough into a piping bag with a star nozzle and squirt paws onto a greased tin.
Bake in a preheated oven at 200 degrees for 10 minutes, then immediately remove the cookies from the baking sheet.
Cover with melted couverture as desired or spread jam on 2 paws each, assemble and only then cover with the couverture.
