- Boil the potatoes and then crumble them by hand, but they should contain smaller pieces, so not as fine as you would make them for mashed potatoes.
- Then add the salt, cayenne pepper, green chillies, coriander and garam masala to the potatoes and mix well.
- Mix the chickpea flour with salt, cayenne pepper and turmeric and add enough water to make a thick, viscous dough.
- Shape the potato mixture into small balls and then dip them in the batter and deep-fry them in hot oil until they are golden in color.
- Serve hot with chutneys.
