Chop or cut the onions and then sweat them with the olive oil in a large saucepan. Then deglaze with the water and while this begins to boil, slice the peeled carrots directly into the pot.
When the water boils, stir in the broth. Cut the zucchini into cubes or halved slices and then add to the soup with the noodles. Simmer for about 20 minutes and then add the chopped tomatoes and peppers.
Add a little water if necessary. Simmer for another 10 minutes and season with spices, salt and pepper.
