Finely grind salt, pepper, allspice, juniper, rosemary, bay leaf and thyme in a mortar and rub the meat with it (you can also use game spices).
Fry the meat in a little oil and then add the mulled wine and onions. Let simmer on low heat for about 1.5-2 hours. Finally add 1 - 2 tablespoons of cranberries and then season the sauce with a little salt and cream.
