Cut the vanilla stick lengthways and scrape out the pulp. Now pour the cherries into a sieve and drain well (the juice is not needed). Heat together with the sugar in a saucepan until the sugar has completely melted, bring to the boil for about 5 minutes and then add the amaretto, lemon juice, vanilla stick and pulp. Let simmer for another 15-20 minutes.
Remove the vanilla sticks and pour the mixture into glasses (jam jars) while still hot. Now turn the glasses upside down and let them cool down.
