Soak all amaretti - except 8-10 pieces - in amaretto until they are slightly mushy. Drain the cherries well. Whip the cream until it is almost stiff (it must not even begin to form flakes of butter, which you would taste extremely afterwards) and stir well with the mascarpone. Fold in the cherries and layer in a bowl with the soaked amaretti - one layer of cream each on top and bottom. Decorate with the retained amaretti and sprinkle with chocolate sprinkles. Chill well.
The dessert gets its sweetness from the amaretto-amarettini mud.
