Cut the dates lengthways, but do not cut through, and core. Roast the almonds in a pan. Mix the cream cheese with the orange juice, the orange peel and the amaretto and stir well. Fill the mass into a piping bag, if possible with a star nozzle, and inject a distinctive strip of the mass into each date.
Allow to cool well in the refrigerator and sprinkle with the roasted almonds just before serving.
