Instructions

  1. Mix the pudding powder with the sugar and some cold milk until smooth, bring the remaining milk to the boil and stir in the mixed powder. Bring to the boil while stirring and then allow to cool (place cling film directly on the surface of the hot pudding, then no skin will form). Lightly toast the coconut flakes in a pan.
  2. Beat the cooled pudding until smooth. Fold a mug of whipped cream with the amaretto into the pudding. Put the mixture in a serving bowl. First layer the pineapple pieces and then the crushed amarettini on top of the cream. Carefully distribute the second cup of whipped cream over the amarettini. Finally, distribute the roasted coconut flakes over the cream.
  3. Chill the cream until you eat it (do not let it stand too long, otherwise the amarettini will soak up too much of the pineapple juice and lose their crispness).
