Melt the sugar in a saucepan while stirring, it doesn`t have to melt all of the sugar. Add the water. Be careful, it can splash! Lift up with a spoon so that the water gets under the sugar so it doesn`t burn. This dissolves again completely. Let it boil for about 30 minutes, then take the pan off the fire, stir in the bitter almond aroma and amaretto. Let it cool down a bit and then fill it.
