Mix the egg, fat and buttermilk well. Mix the flour, baking powder, baking soda, sugar and salt, add and stir to a smooth dough. Bake four small pancakes one after the other in hot clarified butter in a coated pan. To do this, pour in the dough by the tablespoon, spread a little and bake the pancakes for about three minutes on each side. Pour maple syrup over the pancakes and serve with butter as desired.
