Instructions

  1. Halve the hard-boiled, quenched and peeled eggs lengthways. Remove the egg yolks and crush them in a bowl with a fork. Add mayonnaise, mustard, paprika powder or cayenne pepper, salt and black pepper and stir. Pour the mixture into a piping bag with a serrated or straight tip or fill it into a plastic bag, close it and cut off one of the lower corners. Fill the egg halves with the mixture. Sprinkle with a little paprika or cayenne pepper.
