  1. Preheat the oven to 140 ° C. Cut the garlic bulbs at the top so that the individual cloves are cut. Drizzle with a little olive oil. Wrap the two tubers in aluminum foil so that the upper end of the toes remains free. Place the garlic bulbs in the oven for about 1 1/2 hours. Peel and dice the potatoes and cook in salted water for about 25 minutes until soft and drain. Take the garlic bulbs out of the oven and carefully pry the cloves out of the bulbs. Warm up the milk. Finely puree the soft, roasted garlic mixture in a blender together with the warm milk. Mash the cooked potato pieces with a potato masher, pour in half of the garlic milk and stir. Gradually pour in the garlic milk. Stir in the butter and parmesan. Season to taste with salt, pepper and a little grated nutmeg.
