Heat the oil in a pan on the stove over medium heat. Add the carrots and simmer for 4 minutes, stirring occasionally. Add the ginger and sugar and simmer for another 2 minutes until the sugar has dissolved.
Add the pecans and mix with the carrots. Simmer for 3 to 5 minutes until the sugar caramelizes (the carrots should still have a bite).
All types of meat, poultry and potatoes go well with it.
