Instructions

  1. Shortcrust pastry: Knead a shortcrust pastry from the first 6 ingredients and place in the refrigerator for at least 2 hours, or better overnight.
  2. Topping: Mix the pudding powder with 2/3 of the sugar and 1/4 l milk. Bring the rest of the milk to the boil, stir in the mixed pudding powder and bring to the boil briefly. Stir in the lemon zest, quark and egg yolks. Beat the egg whites with the remaining sugar until stiff and fold into the quark mixture. Pour the mixture into the pan lined with the shortcrust pastry, bake in the oven, middle rack, at 175 degrees for 45 minutes.
